Description 2-pentylfuran is a member of the class of compounds known as heteroaromatic compounds. Heteroaromatic compounds are compounds containing an aromatic ring where a carbon atom is linked to an hetero atom. 2-pentylfuran is practically insoluble (in water) and an extremely weak basic (essentially neutral) compound (based on its pKa). 2-pentylfuran is a beany, butter, and earthy tasting compound and can be found in a number of food items such as yellow bell pepper, pepper (c. annuum), nuts, and watermelon, which makes 2-pentylfuran a potential biomarker for the consumption of these food products. 2-pentylfuran can be found primarily in feces, saliva, and urine. 2-pentylfuran exists in all eukaryotes, ranging from yeast to humans.
